Burrito Bowls 4 Ways

Take burrito bowls to the next level by topping them with chicken fajita, smoky shrimp, sweet potato or spicy turkey.

Spicy Shrimp

Ingredients For the Cilantro Lime Brown Rice :

  • 2 cups cooked brown rice
  • 1 1/2 tablespoon freshly squeezed lime juice
  • 2 tablespoon fresh cilantro, chopped
  • 1/2 teaspoon sea salt

Ingredients For The Spicy Shrimp :

  • 1 tablespoon olive oil
  • 1 pound shrimp, deveined & shelled
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon garlic powder

Ingredients For the Bowl :

  • 1 avocado, sliced
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup fire-roasted corn, thawed
  • Chopped cilantro, for garnish

Instructions For Spicy Shrimp :

  • To make the rice, combine the ingredients in a large mixing bowl, then set aside.
  • To cook the shrimp, heat olive oil over medium-high heat. Add the shrimp and seasonings. Cook, stirring occasionally, until shrimp is cooked through, about 4-5 minutes. Remove from heat.
  • To assemble the bowl, start with a base of the cilantro lime rice, followed by the cooked shrimp, sliced avocado, black beans, and corn. Add chopped cilantro to serve.

Chicken Fajita

Ingredients For the Cilantro Lime Brown Rice :

  • 2 cups cooked brown rice
  • 1 1/2 tablespoon freshly squeezed lime juice
  • 2 tablespoon fresh cilantro, chopped
  • 1/2 teaspoon sea salt

Ingredients For the Chicken & Fajita Peppers :

  • 1 tablespoon olive oil
  • 2 boneless, skinless chicken breasts
  • 1/4 teaspoon sea salt
  • 1/2 red onion, sliced
  • 1/2 red pepper, sliced
  • 1/2 yellow pepper, sliced
  • 1/2 green pepper sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper, plus more to season chicken
  • 1 tablespoon freshly squeezed lime juice

Ingredients For the Bowl :

  • 2-3 leaves lettuce, thinly sliced
  • 1 lime wedge, for garnish

Instructions For Chicken Fajita :

  • To make the rice, combine the ingredients in a large mixing bowl, then set aside.
  • To cook the chicken, heat olive oil over medium-high heat. Lightly season with sea salt and pepper. Cook chicken on both sides until cooked through, about 4-6 minutes per side. Remove chicken and allow to cool in order to slice.
  • Add the bell peppers, onion, and seasonings. Cook, stirring occasionally, until peppers are mostly cooked through, about 4-6 minutes. Remove from heat.
  • To assemble the bowl, start with a base of the cilantro lime rice, followed by the cooked, sliced chicken, fajita peppers, and lettuce. Top with fresh lime juice and serve.

Sweet Potato and Black Bean

Ingredients For the Cilantro Lime Brown Rice :

  • 2 cups cooked brown rice
  • 1 1/2 tablespoon freshly squeezed lime juice
  • 2 tablespoon fresh cilantro, chopped
  • 1/2 teaspoon sea salt

Ingredients For the Sweet Potatoes :

  • 2 sweet potatoes, diced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper

Ingredients For the Bowl :

  • 1 15.5 ounces black beans, rinsed and drained
  • 1 avocado, diced
  • 1 jalapeno, sliced

Instructions For Sweet Potato and Black Bean :

  • To make the rice, combine the ingredients in a large mixing bowl, then set aside.
  • To roast the sweet potatoes, toss the sweet potatoes with olive oil and seasonings. Place on baking sheet and roast in preheated 425 degree F oven for 15-20 minutes, or until crispy and tender.
  • To assemble the bowl, start with a base of the cilantro lime rice, followed by the roasted sweet potatoes, black beans, cilantro, sliced avocado. Top with sliced jalapeño and serve.

Turkey Taco

Ingredients For the Cilantro Lime Brown Rice :

  • 2 cups cooked brown rice
  • 1 1/2 tablespoon freshly squeezed lime juice
  • 2 tablespoon fresh cilantro, chopped
  • 1/2 teaspoon sea salt

Ingredients For the Taco Meat :

  • 1 tablespoon olive oil
  • 1 pound lean ground turkey
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cayenne
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper

Ingredients For the Bowl :

  • 1 15 ounces can olives, sliced
  • 1/3 bunch cilantro
  • 1/2 cup grape tomatoes, sliced in half
  • Dollop plain greek yogurt, for topping

Instructions For Turkey Taco :

  • To make the rice, combine the ingredients in a large mixing bowl, then set aside.
  • To cook the taco meat, heat olive oil over medium-high heat. Add the turkey and seasonings. Cook, stirring occasionally, until meat is cooked through, about 6-8 minutes. Remove from heat.
  • To assemble the bowl, start with a base of the cilantro lime rice, followed by the taco meat, olives, cilantro, grape tomatoes, and dollop of greek yogurt.
